Espresso

We like espresso for what it asks of the coffee: everything, all at once. Pressure, heat, and precision concentrate sweetness, texture, and aroma into a small, intense cup. Nothing has much room to hide. When the balance is right, the result is rich and expressive—a concentrated glimpse of everything the coffee has to give.

Declump fine grounds with a WDT (Wire Distribution Tool). Tamp until there's resistance.

Tare scale. Watch 3-5 sec. for pre-infusion followed by continuous stream that shoud have the consistency flow of honey.
