Abbey Ale begins with a Colombian single-origin — washed, specialty grade, chosen for its clean structure and natural sweetness — then co-fermented with a live Belgian ale culture before a single bean ever meets heat. The yeast doesn't flavor the coffee. It becomes part of it.
